Abstract(s)Gellan gum is a natural anionic extracellular polysaccharide obtained by fermentation of the bacteria Sphingomonas elodea. It has the distinctive property of temperature-dependent, cation-induced gelation. This entry summarizes the current knowledge on the production, structure and properties of gellan gum. In addition, an overview of the current and potential biomedical applications of gellan is given.
