Implementação da Norma IFS Food em duas unidades industriais

Abstract

Face ao aumento da complexidade da cadeia alimentar, às mudanças nos hábitos alimentares dos consumidores finais, à crescente preocupação das empresas com a segurança alimentar dos seus produtos, bem como às exigências de muitos fornecedores e clientes a nível internacional, muitas empresas do setor agro-alimentar têm-se visto forçadas a referenciais de qualidade e segurança específicos, como a norma IFS Food, contribuindo para uma abordagem global e integrada em toda a cadeia alimentar. Nesse sentido apresenta-se este trabalho cujo objetivo é o estudo e contribuição para a implementação da norma IFS Food em duas unidades industriais, exercendo uma delas no setor de panificação e a outra no setor dos produtos ultracongelados, sob a supervisão da empresa InBioSide, IBS – Unipessoal, Lda. Inicialmente elaborou-se uma contextualização teórica e analisou-se o referencial na sua atual versão 7 com o intuito de compreender as melhores metodologias para o cumprimento dos requisitos. Definiram-se ao mesmo tempo os objetivos que se pretendem atingir durante o desenvolvimento do projeto, os resultados esperados e a calendarização do plano de trabalho durante o decorrer do projeto. De seguida, procedeu-se ao estabelecimento do ponto de partida para cada uma das empresas através da avaliação da situação vigente das mesmas em termos legislativos. Com base nessa informação estabeleceu-se um plano de ação que inclui o desenvolvimento de documentação e a realização de melhorias e correções, necessárias para garantir o completo cumprimento as exigências do referencial. A implementação da norma IFS Food introduziu alterações significativas em ambas empresas que permitiram fortalecer a base documental das mesmas de forma que, quando desejarem, apresentem as condições necessárias para obter a certificação.

Given the increasing complexity of the food chain, changes in the eating habits of final consumers, the growing concern of companies with the food safety of their products, as well as the demands of many suppliers and customers at international level, many companies in the agro-industry sector have been forced to establish specific quality and safety standards, such as the IFS Food Standard, contributing to a global and integrated approach throughout the food chain. In this sense, the objective of the presented work is to study and contribute to the implementation of the IFS Food Standard in two industrial units, one of them in the bakery sector and the other one in the frozen products sector, under the supervision of the company InBioSide, IBS – Unipessoal, Lda. Initially, a theoretical contextualization was elaborated and the standard was analyzed in its current version 7 in order to understand the best methodologies to fulfill the requirements. At the same time, the objectives to be achieved during the development of the project, the expected results and the schedule of the work plan during the course of the project were defined. Next, the starting point for each of the companies was established by evaluating their current situation in terms of legislation. Based on this information, an action plan was established that includes the develop ment of documentation and the implementation of improvements and corrections, necessary to ensure full compliance with the requirements of the standard. The implementation of the IFS Food Standard introduced significant changes in both companies that allowed them to strengthen their document base so that, when they wish, they present the necessary conditions to obtain certification.
