Resumo(s): | A cerveja apresenta-se como uma das bebidas mais consumidas a nível mundial. Segundo um
estudo realizado pela associação The Brewers of Europe, Portugal ocupa o 13° lugar entre os 31 países
produtores, sendo que o mercado de cerveja artesanal corresponde apenas a cerca de 1% do mercado
total cervejeiro. Atualmente, observa-se um aumento no consumo e produção de cervejas artesanais.
As matérias primas normalmente utilizadas na produção da cerveja contêm na sua composição
glúten, o mesmo é definido como a fração proteica do trigo, centeio, cevada, aveia entre outros. As
intolerâncias ao glúten e as doenças associadas ao seu consumo levaram à criação de um mercado de
produtos sem glúten que se apresenta em grande expansão. Segundo estudos realizados pela empresa
Market Updates, prevê-se que o mercado de cervejas sem glúten apresente um aumento de 13,5% por
ano, dentro do período de 2018 a 2023. Deste modo, o objetivo deste trabalho passa pela produção de
uma cerveja artesanal sem glúten sem afetar as características físico-químicas e organoléticas da cerveja.
A produção de cerveja com remoção do glúten utilizando enzimas foi testada em três escalas distintas.
Primeiramente realizou-se a produção em escala laboratorial, utilizando garrafões de 5 litros, onde os
resultados obtidos foram promissores. A utilização de enzimas não provocou alterações relevantes ao
nível das características organoléticas e/ou físico-químicas. Além disso, o nível de glúten apresentou-se
abaixo do limite estabelecido por lei (20ppm). Face a estes resultados, decidiu-se avançar com a
produção teste de 100 litros de uma cerveja sem glúten do estilo Pilsner. Adaptou-se a receita para esta
escala de produção e os resultados voltaram a ser favoráveis em todos os parâmetros. Assim sendo,
avançou-se com a produção de 1000 litros de cerveja sem glúten, com o objetivo de a lançar para o
mercado. A análise dos resultados obtidos a nível sensorial e físico-químico demonstrou que a cerveja
obtida apresenta as características pretendidas para o estilo e que cumpre os requisitos para ser rotulada
sem glúten.
No final realizou-se a adaptação do plano HACCP presente na fábrica de forma a cumprir com os
requisitos de produção de produtos sem glúten e efetuou-se uma análise económica do processo utilizado
na produção de cerveja sem glúten, tendo-se verificado um aumento no custo de produção de
aproximadamente 9,3% relativamente à produção usual do mesmo estilo de cerveja. Beer presents itself as one of the most consumed drinks worldwide. According to a study carried out by the association The Brewers of Europe, Portugal ranks 13th among the 31 producing countries, with the craft beer market accounting for 1% of the total beer market. Actually, an increase in craft beer consumption and production is observed. The raw materials normally used in beer production contain gluten in their composition, the same is defined as the protein fraction of the wheat, rye, barley, oats, among others. Gluten intolerances and diseases associated with its consumption have led to the creation of a market for gluten free products that is expanding rapidly. According to studies conducted by the Market Updates company, it is expected that the gluten free beer market will increase by 13.5% per year, within the period from 2018 to 2023. Thus, the objective of this work is the production of a gluten free craft beer without disturbing the physical-chemical and organoleptic characteristics of beer. The production of beer with gluten removal using enzymes was tested on three distinct scales. First, the production was carried out on a laboratory scale, using 5 liters bottles, where the results obtained were encouraging. The use of enzymes didn’t cause significant changes in organoleptic and physical-chemical characteristics. In addition, the level of gluten was below the limit established by law (20ppm). In view of these results, it was decided to move forward with the 100 liters test production of a Pilsner style gluten free beer. The recipe was adapted for this production scale and the results were again positive in all parameters. Therefore, we move forward to the production of 1000 liters of gluten free beer, with the aim of launching it to the market. The analysis of the results obtained at the sensory and physical chemical level showed that the beer obtained has the desired characteristics of the style while meeting the requirements to be labelled gluten free. In the end, the factory HACCP plan was adapted in order to comply with the production requirements of gluten free products and an economic analysis of the process used in the production of gluten free beer was carried out. There was an increase in the cost of the production of approximately 9.3 % compared to the typical production of the same style of beer. |
