dc.description.abstract | Na atualidade e dando voz às novas tendências de mercado no que diz respeito à indústria alimentar, a preferência do consumidor final por alimentos mais saudáveis, sustentáveis e naturais têm vindo a ganhar notoriedade. Neste sentido, o crescimento exponencial do plant-based é diretamente correlacionável com o aumento da preocupação da população por uma alimentação cuja origem e processo de fabrico acompanhe as questões de saúde e bem-estar como são exemplo as intolerâncias e alergias alimentares. Anualmente, os produtos de origem não animal ganham cada vez mais espaço no mercado em detrimento dos produtos de origem animal. Nesse seguimento, as bebidas vegetais apresentam-se como uma alternativa emergente e de elevado potencial nutricional. Sendo uma área de estudo recente surge a oportunidade de gerar mais conhecimento à cerca destas. Assim, um dos objetivos deste trabalho visa a resolução de desafios tecnológicos associados à solubilidade e agregação de proteínas, aquando da aplicação de tratamentos térmicos e acidificação. A resolução deste problema é aplicável às bases concentradas e consecutivamente às bebidas vegetais enriquecidas com proteínas exógenas. Com a finalidade de estudar a viabilidade de produção de bebidas vegetais enriquecidas com 3 % (m/v) e 5 % (m/v) de proteína, foram utilizadas diferentes fontes de proteínas e diferentes soluções de otimização do produto final conjugando uma terceira variável: tratamento térmico convencional e tratamento térmico alternativo, neste caso, o aquecimento óhmico. Os resultados permitiram concluir ser possível a elaboração das bebidas acima referidas e ainda a possibilidade de gerar, também, uma bebida enriquecida até 3 % (m/v) de proteína acidificada através do uso de um tratamento térmico convencional. Foi ainda possível antecipar e extrapolar, para futuro, uma substituição do método Ultra High Temperature- Direct Steam Injection (UHT-DSI) pelo aquecimento óhmico que se mostra promissor com a redução da degradação da proteína e degradação da cor do produto. | por |
dc.description.abstract | Nowadays and according to new market trends in the food industry, the healthier, sustainable and natural foods are gaining more and more notoriety by the consumers. In this sense, the exponential growth of the plant-based foods is directly correlated with the increasing concern of the population for a food whose origin and manufacturing process are in line with health and well-being issues, such as food intolerances and allergies. Annually, non-animal origin products are increasing their market share in detriment of products of animal origin. In this segment, plant-based drinks are presented as an emerging alternative with high nutritional value. Being an emergent area of study, there is an opportunity to generate more knowledge about these. Thus, one of the main goals of this work is to solve technological challenges associated with protein aggregation and solubilization, such as heat treatments and acidification applied to the final product. The problem solving is concerning to concentrated bases and vegetable beverages enriched with exogenous proteins. In order to study the viability of producing vegetable drinks enriched with 3 % (w/v) and 5 % (w/v) of protein, different sources of proteins and different solutions for optimizing the final product were used, combining a third variable: conventional heat treatment and alternative heat treatment, in this case, ohmic heating. The results allowed us to conclude that it is possible to prepare the drinks aformentioned and also the possibility to generate an acidified drink enriched up to 3 % (w/v) of protein through the use of a conventional heat treatment. It was also possible to anticipate and extrapolate, for the future, a replacement of the Ultra High Temperature- Direct Steam Injection (UHT-DSI) method by the ohmic heating that shows promising results with the reduction of protein degradation and color degradation of the product. | por |
