dc.description.abstractNos últimos anos, as questões ambientais têm recebido grande atenção por parte dos consumidores, refletindo a crescente consciencialização dos problemas. Em alguns países da Europa, a alimentação vegetariana tem vindo a crescer exponencialmente, tendo um nível de aceitação, por parte da restauração, supermercados e consumidores, bastante elevada. Isto é confirmado pelo aumento da oferta, que se tem vindo a registar ao longo dos anos. Hoje, a nutrição vegetariana tem um crescente seguimento internacional. O aumento do número de vegetarianos e veganos é atribuído a preocupações com a saúde e também a questões éticas, ambientais e sociais. Os vegetarianos ainda são uma pequena minoria em todos os países, com exceção da Índia, onde aproximadamente um terço da população é vegetariana. O objetivo principal deste estudo era investigar quais os fatores que influenciam ou não, a mudança de comportamentos alimentares do consumidor português e se a oferta de opções vegetarianas em restaurantes influencia a desistência da adoção de um novo hábito alimentar e ainda se o consumidor português opta por produtos locais e porquê. Tudo isto para perceber a perceção que o consumidor tem sobre este tipo de alimentação. Para tal, realizou-se num inquérito online, para se poder responder à questão de pesquisa e objetivos. Os resultados corroboram a literatura, sendo possível ver que algumas barreiras apontadas pelos consumidores passam por ser a falta de motivação; as questões relativas à saúde; a pressão da sociedade, da família e amigos; a falta de variedade e a pouca acessibilidade aos produtos; a falta de tempo; a questões financeiras. Os fatores influenciadores mais referidos foram as questões ambientais, a defesa dos direitos dos animais, as questões de saúde e até mesmo as questões morais ou religiosas e a influência de terceiros. Os resultados mostram que a investigação contribui tanto para o Marketing Social, como para o comportamento do consumidor português, pois projeta um novo entendimento sobre a sua perceção relativamente a este tipo de alimentação.por
dc.description.abstractIn recent years, environmental issues have received a lot of attention from consumers, reflecting growing awareness of the issues. In some European countries, vegetarian food has been growing exponentially, with a high level of acceptance by catering, supermarkets and consumers. This is confirmed by the increase in supply, which has been registered over the years. Today, the vegetarian nutrition has a growing international following. The increase in the number of vegetarians and vegans is attributed to health concerns as well as to ethical, environmental and Social issues. Vegetarians are still a small minority in all countries, except for India, where about a third of the population is vegetarian. The main aim of this study was to investigate which factors influence or not the change in the eating behavior of the Portuguese consumer and whether the offer of vegetarian options in restaurants influences the withdrawal of a new food habit and, if the Portuguese consumer opts for local products and why. All this to realize the perception that the consumer has about this type of food. To do this, an online survey was conducted to answer the research question and objectives. The results corroborate the literature, and it is possible to see that some of the barriers pointed out by consumers are the lack of motivation; issues related to health; pressure from society, family and friends; lack of variety and lack of accessibility to products; lack of time; to financial issues. The most influential factors were environmental issues, animal rights advocacy, health issues, and even moral or religious issues and the influence of third parties. The results show that the research contributes as much to Social Marketing as to the behavior of the Portuguese consumer, since it projects a new understanding about their perception regarding this type of food.por
